When you buy fish to cook, check the eyes first. The eyes should be clear as crystal, wet, plump, shiny and there should not be any sunken features. A fresh and healthy fish surely has good eyes. A fresh fish also has healthy-looking dorsal fins and tail. These parts should be wet and intact. Avoid choosing fish with torn or ragged fins because these are the sign of mishandled fish.
